The Science of Animal Husbandry and Food Animal Systems
In this lecture and field based program, we will cover the fundamentals of Animal Science through the study of animal genetics, nutrition, and physiology. Students will learn how to care for chickens, pigs, sheep, goats, and cattle from an individual animal and whole farm ecological perspective. We will visit and study both small and large-scale animal industrial agriculture operations, while examining the economic and environmental challenges facing them. This course will be of interest to students pursuing careers in animal agriculture, veterinary medicine, ecology, and environmental sciences, as well as those who want to gain a general knowledge of how the food animal industry produces meat, milk, and eggs. A strong interest or background in general biology is strongly recommended.
