This course will introduce students to nutrient functions and requirements for human health through all life stages. Students will explore the chemical structure of nutrients, their digestion, absorption and functions within the human body, and guidelines for dietary recommended intakes. Students will record and analyze a food intake diary to make recommendations based upon individualized needs. We will have weekly meetings on Zoom to support dialogue about diet-related chronic diseases and food culture, access and safety. Students will be expected to complete asynchronous class activities through the Canvas site to view recorded lectures and complete assignments.
