Sustainable agriculture and sourcing local, healthy foods are central to Evergreen's identity.
Students can study and practice sustainable agriculture on the campus farm, eat local foods in the cafeteria or student-run café, join a student group, raise a garden, or connect with numerous community organizations with local, healthy food missions. Students have developed the Evergreen Food Guide, a handy nutritional resource.
Our Organic Farm And Farm Stand
Established in 1972 the Organic Farm is one of Evergreen’s most precious and enduring projects. Food from the organic farm is consumed in Evergreen’s cafeteria, sold from a farm-stand on Red Square, and available to the local residents through a Community Supported Agriculture (CSA) program. Any excess food is given to the Thurston County Food Bank, local charities, or is composted. Evergreen’s Organic Farm is also the first college farm in America to officially be certified “salmon safe.”
Operated by students, the farm stand can be found on Red Square during the growing season. You will find the most local and organic produce available on campus, grown and cared for by students who are enrolled in agricultural programs. Proceeds directly benefit the farm.
Ways To Eat Sustainably
A student-run and initiated café, the Flaming Eggplant is open to the public and located in the College Activities Building (CAB). Striving to use seasonal ingredients based on food that is locally available and organically grown, the mission of the Flaming Eggplant is to “nourish people with healthy ingredients, nurture local economy with out business, and break social boundaries to help sustain a unified community.”
The main campus cafeteria, the Greenery, features food fresh from the on-campus Organic Farm, dairy products supplied by Smith Brothers Farm, and eggs from Stiebrs Farms in Yelm. Evergreen is a champion of reducing food waste. We practice composting and recycling and encourage customers to take only what they care to eat and to compost their food waste and packaging after their meal.
The Marketplace is located on the main floor of the CAB and offers locally roasted coffee from Batdorf and Bronson, local bagels, fresh made salads, pizzas, soups, and sandwiches along with natural beverages and other snacks. You will also find compost available in this location!
