Slide 50.
Calvatia booniana, The Western Giant Puffball, is an inhabitant of sagebrush, juniper and other open flats in arid and semi-arid regions. When young and pure white inside it is considered a choice edible species. Calvatia booniana can reach 50 pounds in weight. Anywhere from California to the Great Plains and Eastward you might also be on the look-out for members of the Calvatia gigantia group, Giant Puffballs that are more round in over-all shape and with smaller or indistinct warts. All are considered choice edibles when white and with not a trace of yellowing. Try dipping them in egg batter for tempura.
